Sencha
What makes a tea special is how the farmer can preserve
the natural quality of the tea leaf so as to maintain the colour and aroma as
well as the other fine qualities. Unlike brown tea, sencha is not fermented but
is immediatly steamed to prevent fermentation, this seals in the flavour. Next,
the leaves are fluffed with hot air and then pressed. They are dried until only
3% of their original water remains. After repeated rolling they achieve their
final shape, that of fine needles.
Sencha is harvested several times a year but the first harvest is in late April
and produces "Shincha" tea, these first leaves are the most tender and
produce the highest quality tea. Mount Fuji's tea is only Shincha.
